Heckfield is a semi-hard Guernsey cow’s milk cheese made with vegetarian rennet before being matured for 12 months. It’s made by Village Maid dairy, just 2 miles from the Farm.
Heckfield displays a rich umami flavour and a buttery texture that melts in the mouth. It is naturally golden from the carotene present in Guernsey milk. The texture is often compared to “hard butter”, however the flavour is strong and robust, similar in profile to a mature cheddar.
Unlike most cheeses, Heckfield is best served straight out of the fridge! This retains that beautiful “hard butter” texture. Serve with pickled onions, ploughman’s chutney and fresh crusty bread. In cooking, try a slice of Heckfield on top of a burger or in place of cheddar for an amazing Welsh rarebit.
As a single herd, the milk from our Guernsey cows truly reflects the seasonal changes on the farm. By using a lower, slower pasteurisation process and by not homogenising, our milk and dairy products maintain a full-fat creaminess and rich flavour profile.
Guernsey milk is distinct, not only for its golden hue and sweet, wholesome flavour, but also for its nutritional value. It boasts significantly more protein, vitamin A, D, and calcium than regular milk. Whereas most cow’s milk today contains both A1 and A2 proteins, Guernsey milk contains only the A2 protein. A2 is known to be much easier to digest – many people who generally cannot tolerate cow’s milk may find Guernsey milk and cream suitable.
